Cornflour Crisps

Ingredients

  • 60g Australian butter
  • 1/4 cup caster sugar
  • 1 egg, lightly beaten
  • 3/4 cup cornflour
  • 2/3 cup desiccated coconut
  • 1 teaspoon vanilla essence

Method

  1. Cream butter and sugar until light and fluffy. Gradually beat in egg. Fold in cornflour, coconut and vanilla. Drop teaspoons of mixture onto a buttered baking tray and bake at 190C for 10-15 minutes.

Tips / Handy Hints

Prepare mixture as above. Place teaspoons of mixture onto greaseproof paper on a microwave safe rack. Cook on High for 2 1/2 minutes. Continue until all mixture is used. Allow to cool.
