Corn and Bacon Muffins


  • 1 cup self raising flour
  • 2 rashers lean bacon, chopped
  • 1 cup corn kernals
  • 1/2 cup grated Australian tasty cheese
  • 1 egg
  • 3/4-1 cup Australian natural yogurt
  • extra Australian natural yogurt, for serving

  1. Combine all ingredients together. Spoon into buttered muffin tins and bake in a moderate oven 180C for 20-25 minutes or until golden brown.
  2. Turn out of muffin tin and allow to cool on a wire cooling rack. Make a diagonal cut into each muffin and spoon in a teaspoon of extra yogurt. Serve.
