Colourful Coleslaw with Buttermilk Dressing

Makes 5 cups


  • 180g green cabbage, shredded
  • 120g red cabbage, shredded
  • 100g carrot, grated
  • 2/3 cup Australian buttermilk
  • grated rind of 1 lemon
  • 1 teaspoon mustard

  1. Toss cabbage and carrot together in a bowl. Combine buttermilk, lemon rind and mustard together in a jar and shake until well combined. Pour over coleslaw and refrigerate until ready to serve.
