Coffee and Walnut Pudding

Ingredients

  • 60g Australian Butter
  • 1 cup self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 cup caster sugar
  • 1 teaspoon instant cofee
  • 1/2 cup Australian milk
  • 1 egg, lightly beaten
  • 1/3 cup walnuts, chopped
  • 3/4 cup brown sugar
  • 1 teaspoon instant coffee, extra
  • 3/4 cup hot water
  • 1 tablespoon kahlua
  • 1 tablespoon plain flour
  • Australian cream, for serving

Method

  1. Melt butter in a large mixing bowl on High (100%) for 1 minute. Add flour, bicarbonate of soda, caster sugar, coffee, milk, egg and walnuts, mixing well. Spoon evenly into 4 buttered 1 cup capacity microwave dishes. Combine brown sugar, extra coffee, hot water, kahlua and flour, pour over puddings. Cover and cook, elevated, on Medium (50%) for 6 minutes or until set. Stand, covered, for a further 5 minutes before turning out. Serve with cream.
