Coconut Marshmallow

Serves 6-8


  • 1 x 200g tub Australian creamed cottage cheese
  • 1/4 cup dessicated coconut
  • 1 tablespoon water
  • 60g plain marshmallows
  • toasted dessicated coconut, extra

  1. Mix cottage cheese and coconut together. Pour water into a small saucepan and add marshmallows. Heat gently until marshmallows are completely melted. Stir into cheese mixture and refrigerate until firm. Shape into 20 balls and toss in toasted coconut. Serve with coffee as an after-dinner sweet.
