Coconut Disks served with Coconut and Mango Ice Cream

Serves 4


  • 60g Australian butter, softened
  • 1/3 cup caster sugar
  • 1/2 cup plain flour
  • 1 egg white
  • 2 tablespoons shredded coconut
  • 8 scoops Australian Coconut & Mango ice cream
  • icing sugar, for dusting
  • 1 large mango, sliced, for serving

  1. 1. Cream butter and sugar together until light and fluffy.
  2. 2. Stir in flour to form a smooth mixture.
  3. 3. Gradually add egg white, beating well between each addition.
  4. 4. Place tablespoonfuls of mixture onto buttered paper lined baking trays. Using a spatula, spread mixture to form 10cm rounds. Sprinkle shredded coconut onto each disk.
  5. 5. Bake at 200°C for 5-7 minutes or until disks are pale golden around the edges. Remove from trays and cool on a wire rack
  6. 6. To serve, place a disk on four serving plates and place a scoop of Ccoconut & Mango ice cream. Repeat with next disk and another scoop of ice cream, finishing off with a disk. Dust with icing sugar and serve with mango slices.
  7. --**Tip:**-- Try substituting your favourite flavoured ice cream, for a different flavour combination
