Coconut Custard

Ingredients

  • 1 tablespoon custard powder
  • 250ml Australian milk
  • 1 tablespoon sugar, or to taste
  • 1 tablespoon toasted* coconut

Method

  1. Blend custard powder with a little milk, heat remaining milk in a saucepan. Add custard powder paste and stir constantly over a medium heat until boiling. Simmer for 1 minute. Stir through coconut. Serve warm or chill and serve over fresh fruit.
  2. * Spread shredded or desiccated coconut on a piece of aluminium foil and place under grill. Brown for 1-2 minutes until golden brown.
