Coconut Choc-Banana Cake

Ingredients

  • 125g Australian butter, softened
  • 2 cups brown sugar
  • 3 eggs
  • 100g dark chocolate, melted
  • 1 1/2 teaspoons bi-carbonate of soda
  • 2 ripe bananas, mashed
  • 2 cups self raising flour
  • 3/4 cup Australian thickened cream
  • 3/4 cup boiling water
  • 1/3 cup desiccated coconut
  • 2 cups Australian thickened cream, whipped, extra
  • toasted shredded coconut, for garnish

Method

  1. Cream butter and sugar until smooth. Gradually beat in the eggs. Fold in chocolate, bi-carbonate of soda and bananas. Sift flour over mixture and fold in with cream. Combine water and coconut and fold into mixture. Spoon into 2 x 20cm buttered and lined round tins and bake at 180C for 40-45 minutes. Turn out and allow to cool on wire racks. Sandwich cakes together with half the whipped cream and top with remainder. Sprinkle with toasted shredded coconut.
