Classical Baked Cheesecake

Serves 8-10


  • 150g plain sweet biscuits, crushed
  • 75g Australian butter, melted
  • 500g Australian cottage cheese or 500g Australian cream cheese
  • 3/4 cup caster sugar
  • Finely grated rind of one lemon
  • 2 tablespoons lemon juice
  • 3 eggs
  • 300ml Australian cream

  1. Combine biscuits and butter together. Press firmly into base of 20cm springform pan. Refrigerate until firm. Beat cheese and sugar together until smooth. Thoroughly beat in lemon rind, juice and eggs. Gently blend in cream. Pour into prepared pan. Bake at 160C for 45 minutes. Turn oven off. Leave cheesecake undisturbed in oven for a further 30 minutes. Allow to cool. Chill in refrigerator for several hours. Decorate if desired with fresh or canned fruit and extra cream.
