Classic Baked Cheesecake

Serves 10


  • 125g plain sweet biscuits, crushed
  • 60g Australian butter, melted
  • 500g Australian continental style cottage cheese or Australian cream cheese
  • 3/4 cup caster sugar
  • finely grated rind of 1 lemon
  • 2 tablespoons lemon juice
  • 3 eggs
  • 300ml Australian cream

  1. Combine biscuits and butter and press into base of a 20cm springform pan and refrigerate. Beat cottage cheese and sugar until smooth. Beat in lemon rind, juice and eggs then gently fold in cream. Pour into pan and bake at 160C for 45 minutes. Turn oven off and leave cheesecake undisturbed in oven for a further 30 minutes. Chill for several hours prior to serving.
