Citrus Yogurt Gelato

Serves 10; makes 2 litres


  • 450ml fresh orange juice, strained
  • 50ml fresh lime juice, strained
  • 2 tablespoons orange liqueur
  • 230g caster sugar
  • 330g icing sugar, sifted
  • grated rind of 2 oranges
  • grated rind of 2 limes
  • 1.5 litres Australian natural yogurt

  1. Combine juices, liqueur and caster sugar in a saucepan and stir over medium heat until sugar dissolves. Bring to the boil and simmer, uncovered, until mixture is reduced to 250ml (1 cup).
  2. Remove from heat and allow to cool. Combine icing sugar, grated rind and yogurt and stir into cooled syrup. Pour into a 3 litre container, cover with plastic wrap and freeze for 8 hours or until frozen. Remove from freezer and break gelato with a metal spoon. Process gelato in a food processor until smooth but not melted. Return to container and freeze until frozen.

Tips / Handy Hints

Place metal spoon and the bowl of the food processor in the freezer 10 minutes prior to processing gelato. This will prevent the gelato from melting too quickly when processing. Remove gelato from freezer and transfer to the refrigerator 10 minutes prior to serving.
