Citrus Cheesecake

Serves 8-10


  • BASE
  • 250g Granita biscuits, crushed
  • 60g Australian butter, melted
  • 500g Australian continental-style cottage cheese
  • 1 cup caster sugar
  • 1/4 cup fresh orange juice
  • 1/4 cup lemon juice
  • 1 cup Australian natural yogurt
  • 1 tablespoon gelatine
  • 2 tablespoons hot water
  • 1/2 cup Australian thickened cream
  • 1 x 310g can mandarin segments, well drained

  1. For the base, combine biscuits and butter and press into the base and sides of a buttered and lined 23cm springform pan. Refrigerate until required.
  2. For the filling, beat the cottage cheese, sugar, orange juice, lemon juice and yogurt together until smooth. Sprinkle gelatine onto the hot water, stirring until dissolved. Fold gelatine into the cheese mixture. Pour into prepared base and refrigerate until set. Remove cheesecake from pan and place onto serving platter.
  3. For the topping, beat the cream until soft peaks form. Fold in mandarin segments and spread over top of cheesecake. Slice and serve.
