Cinnamon Cherry Cheesecake Cocktails

  • 2 tablespoons caster sugar
  • 1 tablepsoon cornflour
  • 700g jar morello or sour cherries, drained, juice reserved
  • 1 tablespoon orange liqueur
  • 200g Australian mascarpone cheese
  • 1/2 cup Australian thickened cream
  • 2 tablespoons icing sugar, sifted
  • 2 teaspoons orange liqueur, extra
  • 2 teaspoons ground cinnamon
  • Almond bread or other biscuits, to serve

  1. Combine the arrowroot with a little of the cherry liquid until smooth, add to a saucepan with cherries, remaining liquid and sugar. Bring to a simmer, stirring until slightly thickened. Add 1 tablespoon orange liqueur and simmer for 1 minute then cool to room temperature. Divide cherries and syrup between 4 serving glasses.
  2. Whisk mascarpone, cream, icing sugar, cinnamon and remaining orange liqueur together until smooth and thick, spoon over cherries. Garnish with pieces of almond bread.
