Chunky Tuna Chowder

Serves 6

Ingredients

  • 30g Australian butter
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 2 tablespoons flour
  • 2 cups Australian milk
  • 1 1/2 cups chicken or fish stock
  • 2 potatoes, diced
  • 1 medium carrot, diced
  • 1 x 425g tuna in brine, drained
  • 1 x 440g corn kernels, drained

Method

  1. Melt butter in a saucepan. Add onion and celery and cook for 2 minutes. Add flour and stir for 2 minutes, without browning. Add milk and stock, stir until thickened. Add potato and carrot and simmer for 20 minutes. Roughly break up tuna and add to soup with corn, season to taste. Bring to the boil then serve with crusty bread.
