Chocolate Fudge Cheesecake

  • 200g plain sweet biscuits, crushed
  • 100g Australian Butter
  • 500g Australian Neufchatel Cheese, softened
  • 3/4 cup castor sugar
  • 3 eggs
  • 1 cup Australian Cream
  • 200g melted dark chocolate
  • 2 x 50g cherry choc. bars, roughly chopped
  • 1/2 cup Australian Cream, lightly whipped (optional)

  1. Combine biscuits and butter together, and press into the base of a lightly buttered 22cm springform pan. Beat together the Neufchatel and castor sugar until smoooth. Add the eggs and beat well. Fold through the cream, chocolate and chocolate bars. Pour into the prepared crumb base and bake at 140 oC for 1 hour, 45 minutes. Turn off oven and allow cheesecake to cool in the oven. When cold, remove from pan and chill. Serve with whipped cream if desired.
