Chocolate Dipped Dates Stuffed with Orange, Coconut and Ricotta

These choc dipped stuffed dates are little mouthfuls of heaven! They are the perfect sized morsels to serve with coffee. Don't be folled by their impressive looks, this recipe is easier to make than it looks!

INGREDIENTS

  • 200g fresh ricotta
  • 1/4 cup toasted shredded coconut
  • 1-2 tablespoons orange liqueur
  • finely grated rind of 1 orange
  • 20 fresh dates
  • 180g dark chocolate, melted

METHOD

  1. Combine ricotta, coconut, liqueur and grated orange rind in a bowl.
  2. Slit each date down one side and remove the pip, stuff teaspoonfuls of ricotta mixture into pitted dates and chill for 30 minutes.
  3. Dip half of each ricotta filled date in melted chocolate, shaking off excess. Place dates on a baking paper lined tray and refrigerate until chocolate is firm.

HANDY TIPS

Ricotta mixture is also delicious used as a filling for chocolate cake. This recipe requires fresh ricotta available cut from the wedge at most delicattessens and supermarket delis. You can also dip the entire date in chocolate, if desired. Dates will keep refrigerated for 2-3 days.
