Chocolate Chip Cheesecake

Serves 6-8


  • 225g chocolate ripple biscuits, crushed
  • 80g Australian butter, melted
  • 1 tablespoon gelatine
  • 4 tablespoons white rum
  • 500g Australian continental-style cottage cheese
  • 1/2 cup caster sugar
  • 2 eggs, separated
  • 300ml Australian thickened cream, semi-whipped
  • 1/4 cup Australian milk
  • 125g dark chocolate, finely chopped

  1. Combine biscuits and butter together and press into base and sides of a 20cm springform pan. Refrigerate while preparing filling. Soften gelatine in rum and dissolve over a gentle heat. Beat cheese and sugar together until smooth then gradually beat in the egg yolks. Fold in cream and milk. Stir in dissolved gelatine and chocolate. Whip egg whites to form soft peaks and fold into mixture. Spoon into crumb crust and refreigerate overnight.
