Choc-Orange Ring Cake

Serves 10


  • 125g Australian butter
  • 3/4 cup caster sugar
  • 2 eggs
  • 1/3 cup orange marmalade
  • 1 1/2 cups self raising flour, sifted
  • 1/4 cup cocoa, sifted
  • 3/4 cup Australian sour cream
  • 2 cups icing sugar, sifted
  • 1/3 cup Australian sour cream, extra
  • 2 tablespoons orange marmalade, extra

  1. Cream butter and sugar together until light and fluffy. Gradually beat in eggs. Beat in the marmalade. Sift flour and cocoa together and fold through alternately with the sour cream. Pour mixture into a buttered and lined 25cm x 7cm ring pan and cook on High for 7 1/2 minutes on a rack. Allow to stand for 5 minutes on bench before turning out onto a wire cooling rack.
  2. ICING
  3. Beat together all ingredients, spread over cake, then garnish with melted dark chocolate and orange segments.
