Chinese Beef with Broccoli

Serves 4-6


  • 750g blade bone steak, trimmed of excess fat
  • 1 bunch broccoli, broken into flowerettes
  • 3 medium onions, sliced
  • 125g Australian ghee
  • Marinade -
  • 4 tablespoons soy sauce
  • 1 tablespoon dry sherry
  • 2 teaspoons sugar
  • Fried Rice -
  • 1 cup uncooked long grain rice
  • 3 tablespoons Australian butter
  • 2 eggs, beaten with one tablespoon water
  • 1/4 cup chopped spring onion
  • 1 tablespoon reserved marinade

  1. Cut beef across the grain into thin strips. Combine with marinade and allow to stand in refrigerator for at least one hour. Plunge broccoli and onion into boiling water. Return to the boil then drain. Melt half the ghee in a frypan, add broccoli and onion and stir fry for 5 minutes. Remove and keep warm. Drain and reserve marinade from meat. Melt remaining ghee over high heat. Add beef and cook for 3 minutes. Return broccoli and onion to pan with meat. Cook one minute, then keep warm while cooking Fried Rice ( see below). Spoon rice around the rim of a serving platter. Place meat mixture attractively in the centre.
  2. Fried Rice - Cook rice and drain well. Melt half the butter in a large frypan. Add eggs and allow to set into an omelette. Remove from pan, cut into strips and set aside. Add remaining butter, spring onions and rice to pan. Toss over high heat 4-5 minutes. Stir in marinade.
