Chilled Tomato Soup

Serves 4-6

Ingredients

  • 1 x 425g can whole peeled tomatoes
  • 250g Australian continental-style cottage cheese
  • 1 cup chicken stock
  • 1 small clove garlic, crushed
  • 1/2 teaspoon celery salt
  • 1 tablespoon chopped parsley
  • 12 thin cucumber slices, for garnishing

Method

  1. Combine all ingredients, except parsley and cucumber together in a vitamizer. Blend at high speed until smooth and creamy. Pour into a 4 cup soup tureen. Refrigerate until well chilled. Sprinkle lightly with parsley. Arrange cucumber gently on top to garnish. Serve as a satisfying luncheon soup with crisp low calorie crackers and a green salad.
