Chicken Waldorf Salad

Serves 4


  • 1 roast chicken, cut into bite-size pieces
  • 3 celery stalks, sliced diagonally plus any young celery leaves
  • 2 apples, cored and cut into thin batons
  • 1/2 cup walnut pieces
  • 1/4 cup Australian sour cream or Greek style yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons wholegrain mustard
  • salt and freshly ground black pepper, to taste
  • 1/2 cup shaved parmesan cheese, for sprinkling.

  1. 1. Combine, chicken, celery, apple and walnuts in a large bowl.
  2. 2. Mix sour cream with lemon, mustard and season to taste.
  3. 3. Pour dressing over the salad and toss to combine. Sprinkle with parmesan and black pepper before serving.
