Chicken Stock

Makes 1 cup


  • 1 chicken drumstick
  • 1 medium carrot, diced
  • 1 stalk celery, sliced
  • 1 small onion, chopped
  • 2 cups water

  1. Place all ingredients in a saucepan and allow to simmer for 20 minutes. Remove chicken flesh from bones, (flesh may be used at a later date). Return bones to saucepan and cook another 10 minutes or until liquid has reduced to half. Strain liquid and reserve. Use as a base for chicken broth, or combined with pureed vegetables or meat.
