Chicken Passion

  • 4 chicken fillets, skin removed
  • 250g Australian ricotta cheese
  • 2 oranges
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon tabasco sauce
  • 4 spring onions, chopped
  • Passionfruit Sauce (see recipe)
  • 1 cup chicken stock
  • 3 tablespoons orange concentrate
  • 1 passionfruit
  • juice of 1/2 lemon
  • 2 tablespoons arrowroot

  1. Flatten fillets with a meat mallet until quite thin. Combine ricotta cheese, grated rind of 1 orange, cinnamon, tabasco sauce and spring onions together. Spread over the surface of each chicken fillet to within 1cm of the edge. Segment the remaining orange. Place the segments down the centre of each fillet. Season to taste. Roll each fillet securely. Place in a baking dish and cook for 40 minutes at 180oC or until cooked and golden on the top.
  3. Place all ingredients except arrowroot in a saucepan and bring to the boil. Blend arrowroot with a little water. Add to saucepan, stir until thickened. Season with freshly ground black pepper.
