Light and Easy Chicken Parmigiana

Serves 4


  • 4 chicken breast fillets
  • olive oil spray
  • 1 cup Italian tomato pasta sauce
  • 4 thin slices, lean ham
  • 1/2 cup Australian parmesan, grated
  • 1/2 cup Australian mozzarella, grated

  1. 1. Spray each chicken fillet with a little olive oil spray, panfry until browned and almost cooked through. Transfer to a baking paper lined oven tray.
  2. 4. Spread pasta sauce on chicken, top each fillet with a slice of ham and sprinkle with cheeses, bake at 180C until cheese is golden and bubbly.  Serve with vegetables or crisp green salad.

Tips / Handy Hints

This is a healthier version of a traditional chicken parmigiana.
