Chicken Mushroom Bake

Serves 4


  • 4 chicken breasts, skin removed
  • 1 onion, finely sliced
  • 100g mushrooms, sliced
  • 1 cup condensed mushroom soup
  • 1/3 cup dry white wine
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh tarragon
  • 40g grated Australian swiss-style cheese

  1. Place chicken in a casserole dish and cover with onions and mushrooms. Mix soup with wine and herbs, pour over chicken. Cover, cook in microwave oven on High for 10 minute, stir and cook for another 5-10 minutes until tender. Remove from microwave oven, sprinkle with cheese, stand for 2 minutes before serving with rice or seasonal vegetables.
