Chicken Macaroni Cheese

Ingredients

  • 25g Australian butter
  • 1 onion, diced
  • 2 rashers lean bacon, sliced
  • 2 tablespoons plain flour
  • 2 1/2 cups Australian milk
  • 2 tablespoons tomato paste
  • 500g spiral pasta, cooked
  • 2 cups cooked chicken
  • 1 cup grated Australian cheddar cheese
  • 2 zucchini, sliced and blanched
  • 1 tomato, chopped
  • 1/4 cup grated Australian parmesan or romano cheese

Method

  1. 1. Melt the butter in a saucepan and saute the onion and bacon.
  2. 2. Add the flour and cook for 2 minutes, add the milk and tomato paste and stir until thickened.
  3. 3. Combine the pasta, cooked chicken, cheese, zucchini and tomato and place into an ovenproof dish.
  4. 4. Pour the sauce over and top with parmesan cheese. Bake at 180°C for 20-25 minutes. Serve immediately.

Tips / Handy Hints

Try using shredded BBQ chicken, for a more flavoursome result.
