Chicken Fillet Mozzarella

Ingredients

  • 50g Australian butter
  • 1 clove garlic, crushed
  • 1 onion, finely chopped
  • 4 chicken fillets, skinned
  • 1 green capsicum, deseeded and chopped
  • 1 teaspoon dried basil
  • 1 tablespoon tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon red wine
  • 1 tablespoon flour
  • 2 slices Australian mozzarella cheese, cut into strips
  • 1 teaspoon dried oregano

Method

  1. Combine butter, garlic and onion, and spread evenly over chicken. Place into a casserole dish and cook, covered, on Medium/High (70%) for 3 minutes. Combine capsicum, basil, tomato paste, worcestershire sauce, red wine and flour. Spoon over chicken, and top with mozzarella strips and oregano. Cover and cook on Medium/ High (70%) for 3 minutes.
