Chicken Carbonara


  • 20g Australian butter
  • 6 spring onions, chopped
  • 4 slices lean leg ham, cut into strips
  • 1 red capsicum, sliced
  • 4 chicken fillets, skin removed and cut into strips
  • 2 eggs
  • 300ml Australian thickened cream
  • 1/4 cup grated Australian Parmesan cheese
  • 250g flat egg noodles, cooked

  1. Melt butter in a large saucepan and saute spring onion. Add ham and capsicum and cook for 1-2 minutes. Add chicken and cook until browned. Combine the eggs, cream and cheese and add to the chicken. Toss through noodles just before serving.
