Chicken Bolognaise Pancakes

Serves 4


  • 5 tablespoons wholemeal flour
  • 1 1/3 cups Australian buttermilk
  • 1 egg, lightly beaten
  • 1/4 teaspoon dried oregano
  • 3/4 cup onion, finely chopped
  • 2 cloves garlic, crushed
  • 300g minced lean chicken
  • 1 x 425g can tomatoes
  • 1 cup sliced mushrooms
  • 3 bay leaves
  • 1 tablespoon tomato paste
  • 75g Australian mozzarella cheese, grated
  • OR 4 tablespoons grated Australian Parmesan cheese

  1. Place flour in a bowl. Mix in buttermilk, egg and oregano to form a smooth batter. Stand for 1 hour. Fry onion and garlic in a non- stick saucepan with a little water until onion is transparent. Add chicken and cook until browned. Add tomatoes, mushrooms and bay leaves. Cover and simmer for 1 hour, stirring occasionally. Remove bay leaves, then stir in tomato paste. Heat a non-stick frypan. Pour in 1/4 of the pancake batter and cook until browned on the bottom. Turn over and cook other side. Remove to serving plate and keep warm. Continue process to make 4 pancakes. Spoon chicken sauce over pancakes, sprinkle with cheese and serve hot.
