Chicken & Mango Shasliks

Ingredients

  • 300g chicken fillets, skin removed
  • 2 tablespoons honey
  • 1/4 cup lemon juice
  • 1/4 teaspoon Chinese five-spice
  • 1 tablespoon fresh ginger, grated
  • 1 (200g) mango, skinned and diced
  • 100g snow peas, halved
  • 1/3 cup Australian low fat natural yogurt
  • 2 cups cooked brown rice, hot
  • 1 tablespoon sesame seeds, toasted

Method

  1. Cut chicken into 3cm cubes, place in a bowl. Combine honey, lemon juice, five-spice and ginger together and pour over chicken. Marinate overnight. Thread chicken, mango and snow peas alternately onto 6 skewers, starting and ending with a snow pea. Arrange shasliks on turntable or a large plate (like spokes of a wheel). Cook on high (100%) for 2 minutes. Turn shasliks from centre to outside and cook another 2 minutes. Brush with marinade and stand for 1 minute. Stir yogurt through rice. Divide rice onto 6 serving plates. Place a shaslik on each and sprinkle with sesame seeds. Alternatively, shasliks may be grilled or cooked on the bbq.
