Chewy Chocolate Brownies

Serves 8-10


  • 100g dark chocolate, chopped
  • 90g Australian butter, cubed
  • 1 cup caster sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 cup plain flour
  • 1/4 teaspoon baking powder
  • 1/2 cup walnuts or pecan nuts, chopped
  • 100g dark chocolate, chopped, extra
  • 1/4 cup Australian sour cream

  1. Place chocolate and butter in a large bowl and melt on HIGH (100%) for 2 minutes stirring occasionally. Add the sugar, eggs, vanilla, flour, baking powder and nuts and mix well. Pour into a buttered and lined 22cm x 17cm rectangular microwave pan. Cook elevated on HIGH (100%) for 6 minutes or until a skewer inserted in the centre comes out clean. Stand covered for 5 minutes before turning out. Melt the extra chocolate in a bowl on HIGH (100%) for 2 minutes. Allow to cool slightly and stir in sour cream. Cover the brownie mixture with the chocolate frosting and allow to set. Serve cut into fingers at room temperature.
