Cherry Sauced Flapjacks

Serves 6


  • 1 egg
  • 3/4 cup Australian milk
  • 3/4 cup self raising flour
  • 1/4 cup plain flour
  • 1 tablespoon caster sugar
  • 2 teaspoons cornflour
  • 1/4 teaspoon ground ginger
  • 1 x 425g can sweet red cherries, stoned and juice reserved
  • 1/4 cup brown sugar
  • 1/2 cup Australian sour cream
  • 2 tablespoons crushed mixed nuts

  1. Whisk together egg, milk, flours and caster sugar to form a smooth batter. In a hot buttered frypan cook heaped tablespoons of batter on each side until golden. Repeat with remaining batter to make 12 flapjacks. Combine cornflour, ginger and reserved cherry juice. Bring to the boil, stirring continuously then simmer for 1-2 minutes. Arrange 6 flapjacks on base of a buttered shallow ovenproof dish. Top with half the brown sugar, cherries and half the sauce. Top with remaining pancakes and sauce. Spoon over sour cream and sprinkle with remaining sugar and nuts. Place under hot grill for 1-2 minutes until sugar caramelises. Serve immediately.
