Cherry-ripe Ice Cream

Serves 4-6


  • 2 cups Australian thickened cream
  • 2 tablespoons caster sugar
  • 1/4 cup brandy
  • 100g dark chocolate, finely chopped
  • 1/4 cup glace cherries, chopped
  • 2 tablespoons desiccated coconut

  1. Beat cream and sugar until soft peaks form then fold in remaining ingredients. Pour into an ice cream tray or container and freeze until firm. Scoop and serve.
