Cherry Nut Florentines



  • 125g Australian butter
  • 1 cup brown sugar
  • 1/2 cup golden syrup
  • 1 cup self raising flour
  • 1/3 cup hazelnuts, chopped
  • 1/3 cup blanched almonds, chopped
  • 1/2 cup glace cherries, chopped
  • 200g dark choc-bits
  • 50g Australian butter, extra

  1. Combine butter, sugar and syrup in a saucepan and allow to dissolve over a gentle heat. Remove from heat and stir in remaining ingredients except choc-bits and extra butter. Place heaped teaspoons of mixture approximately 6cm apart on buttered baking trays. Bake at 150C for 10-15 minutes. Allow to stand on trays for 1-2 minutes before lifting off onto cooling racks using a wide spatula. Melt choc-bits and extra butter in a bowl over hot water. Spread over the flat side of each florentine. Allow to set before serving.
