Cheesy Onion Damper

Serves 8


  • 250g plain flour
  • 250g wholemeal flour
  • 1/4 cup Australian skim milk powder
  • 1 teaspoon caster sugar
  • 1 teaspoon bicarbonate of soda
  • 100g grated Australian parmesan cheese
  • 60g grated Australian cheddar cheese
  • 40g Australian butter, melted
  • 1 onion, sliced into thin rings
  • 65ml lemon juice
  • 375ml water
  • 100g grated Australian parmesan cheese, extra
  • Australian butter, extra, for serving

  1. 1. Sift together flours, milk powder, caster sugar and bicarbonate of soda. Mix in cheeses, melted butter and onions, reserving a few onion rings for garnish. Mix in lemon juice and water to form a soft dough.
  2. 2. Knead lightly on a floured board, then shape into a large 18cm diameter round. Place on a paper lined baking tray. Cut a deep cross on top and press reserved onion rings into damper, if desired.
  3. 3. Sprinkle with extra grated cheese and bake at 190°C for 1 hour. Wrap in a tea towel and allow to cool, before slicing and serving with butter.
