Cheesy Chicken Nuggets

  • 3 skinless chicken breast fillets
  • 1/2 cup cornflake crumbs
  • 2 tablespoons shredded Australian parmesan cheese
  • 2 egg whites, lightly beaten
  • 1/4 cup tomato sauce
  • 1/4 cup BBQ sauce

  1. 1. Cut chicken into 3cm cubes. Combine cornflake crumbs and cheese in a bowl.
  2. 2. Dip chicken into egg white and coat in crumb mixture.
  3. 3. Spread in a single layer on a baking paper lined oven tray. Cook at 200°C for 10 minutes. Turn nuggets over and cook for a further 5 minutes.
  4. 4. Combine tomato and BBQ sauce and serve with chicken nuggets.

Try crumbing strips of firm white fish fillets for a homemade 'fish fingers'.
