Cheesey Whiting

Serves 4


  • 1 cup Australian milk
  • 1 tablespoon chopped parsley
  • 4 whiting fillets
  • 1 tablespoon grated Australian parmesan cheese
  • 1/4 teaspoon dry mustard
  • 2 teaspoons cornflour
  • lemon slices, for garnishing
  • salad or steamed vegetables, for serving

  1. Place milk and parsley in a frypan, bring to the boil. Add fish, reduce heat to simmer, cover and cook for 5-8 minutes or until fish is cooked. Remove fish to warm serving plates. Toss cheese, mustard and flour together. Add to milk and stir until cheese is melted and sauce has thickened. Remove parsley sauce from heat and pour sauce over fish. To serve, garnish with lemon slices and extra parsley. Serve with a salad or steamed vegetables.
