Cheesey Vegetable Roll

  • 250g Australian cheddar cheese, grated
  • 3 sheets filo pastry
  • 1 medium onion, sliced
  • 1/2 cup sliced mushrooms
  • 1 red pepper, chopped
  • 1/2 cup broccoli pieces
  • 1/2 medium carrot, thinly sliced

  1. Sprinkle half a cup of grated cheddar cheese between each sheet of filo pastry then on top of the third sheet. Place the vegetables in the centre of the pastry, sprinkle with remaining cheddar cheese then wrap up to form a parcel. Bake at 200oC for 20-25 minutes.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
