Cheesey Vegetable Pastie

Serves 4


  • 250g Australian cheddar cheese, grated
  • 3 sheets filo pastry
  • 1 medium onion, sliced
  • 1/2 cup sliced mushrooms
  • 1 red pepper, chopped
  • 1/2 cup broccoli flowerettes
  • 1/2 medium carrot, thinly sliced

  1. Sprinkle half a cup of grated cheddar cheese between each sheet of filo pastry, layer together then sprinkle cheese on top. Place the vegetables in the centre of the pastry, sprinkle with remaining cheese then wrap up to form a parcel. Bake at 200C for 20-25 minutes.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
