Cheesey Strata Pie

Serves 4


  • 2 potatoes, peeled and diced
  • 1 eggplant, diced
  • 1 green pepper, chopped
  • 2 tomatoes, chopped
  • 1/4 cup Australian skim milk powder
  • 1 tablespoon cornflour
  • 1 cup water
  • 500g Australian continental-style cottage cheese
  • 1 egg, lightly beaten
  • 1 onion, chopped
  • 1 large clove garlic, crushed
  • 1/2 teaspoon dried oregano leaves
  • ground black pepper, to taste

  1. With potato on the base, layer vegetables in a medium sized casserole dish. Bake at 200C for 20 minutes. Combine milk powder and cornflour and dissolve in water. Pour into a saucepan and stir constantly over heat until mixture thickens and comes to the boil. Gradually blend into combined cottage cheese, egg, onion, garlic and seasonings. Pour over vegetables. Reduce oven to 180C and bake for a further 30 minutes.
