Serves 4


  • 2 large tomatoes
  • 125g Australian butter, softened
  • 8 slices wholemeal toasting bread
  • 4 rashers bacon, cut into 4 pieces
  • 1 onion, sliced
  • 1 cup drained, crushed pineapple
  • 8 thin slices Australian mozzarella cheese

  1. Slice each tomato into 4 thick slices. Butter both sides of bread. Place on baking tray. Top each slice with 2 pieces of bacon, a slice of tomato and 2 onion rings, sprinkle with crushed pineapple. Finally place a slice of mozzarella cheese on top. Bake at 190oC for 20-25 minutes or until golden brown.
