Cheesey Damper Knots

Makes 6


  • 125g self raising flour
  • 125g self raising wholemeal flour
  • 20g Australian skim milk powder
  • 3 spring onions, finely chopped
  • 90g grated Australian cheddar cheese
  • 250ml Australian milk
  • egg yolk, for glazing
  • poppy seeds, for sprinkling

  1. 1. Sift flours and milk powder together in a large bowl. Stir in spring onions and cheese.
  2. 2. Make a well in the centre of the dry ingredients, add milk and combine to form a soft dough. Knead lightly on a floured board until smooth. Divide into 6 pieces, roll each piece out to approximately 15cm in length and fold to form a knot.
  3. 3. Place on a buttered baking tray, brush with egg yolk and sprinkle with poppy seeds and bake at 220°C for 15 minutes.

Tips / Handy Hints

When making damper style breads, do not overknead the dough, otherwise damper will be quite tough and not light in texture. Try substituting 1/2 cup grated carrot or grated zucchini for the spring onion
