Cheesey Chicken Salad

Serves 1


  • 1/4 barbecued chicken, cut into cubes
  • 35g Australian Swiss-style cheese, cubed
  • lettuce
  • selection of the following: walnuts, dried apricots, celery, pineapple, cherry tomatoes, carrot sticks
  • 1 teaspoon curry powder
  • 2 teaspoons lemon juice
  • 200g Australian natural yogurt

  1. CURRY YOGURT DRESSING - Dissolve curry in lemon juice and mix in with yogurt. Serve as a salad dressing or use as a sauce or marinade for chicken, fish or meat. (The dressing can be stored in the refrigerator according to the yogurt Use-By Date).
  2. Toss together ingredients and serve as a salad or use as a filling in a pita pocket bread or arrange as a plated salad and serve with a Curry Yogurt Dressing.
