Cheese Straws

  • 2 cups Australian vintage cheddar cheese
  • 1 cup plain flour
  • pinch cayenne pepper
  • 2 tablespoons Australian milk
  • 2 tablespoons iced water
  • extra Australian milk, for brushing
  • approximately 2 tablespoons nigella seeds, optional

  1. 1. Process cheese, flour, cayenne pepper, milk and iced water until well combined.  If required, add extra iced water to allow pastry to form into a ball.  Knead until smooth.  Wrap tightly in plastic wrap and refrigerate for 30 minutes.
  2. 2. Roll pastry out until 5mm thick.  Cut into 4cm rounds or cut into 1cm wide strips and place on a lightly buttered (or baking paper lined) baking tray.  Brush with milk and sprinkle with nigella seeds.
  3. 3. Bake at 200°C for 12-15 minutes or until golden brown. Cool for 3 minutes on baking trays before transferring to a wire rack to cool completely.
  4. 4. Serve with drinks or store in an airtight container until ready to serve.
