Cheese Straws

Makes 35-40


  • 90g Australian butter, softened
  • 200g Australian matured cheddar cheese, grated
  • 1 1/2 cups plain flour
  • 2 egg yolks, lightly beaten
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 teaspoons lemon juice
  • 1 egg white

  1. Combine butter and cheese. Add the remaining ingredients except the egg white. Knead lightly to form a soft dough. Refrigerate for 30 minutes. Roll out to 6mm thickness and cut into sticks 1cm wide and 10 cm long. Place onto a buttered baking tray and brush with egg white. Bake at 230C for 10-12 minutes or until golden brown.
