A childhood favourite, these are a twist on a basic scone dough with the addition of cheese. This dough can also be used for scrolls, pizzas or scones.

INGREDIENTS

  • 30g butter
  • 2 cups self raising flour
  • 1 cup grated cheddar cheese
  • 3/4 cup milk
  • sultanas, for decoration

METHOD

  1. Rub butter into flour until the mixture resembles breadcrumbs. Mix in cheese.
  2. Make a well in the centre of ingredients and add milk.
  3. Add milk and mix to form a soft dough.
  4. Knead dough lightly on a floured board.
  5. Roll out to 1cm thickness and cut into gingerbread men shapes. Re-roll as necessary.
  6. Place on paper lined baking trays.
  7. Make faces and 'buttons' using sultanas.
  8. Bake at 200°C for 15 minutes or until golden brown.

HANDY TIPS

If you don't have a gingerbread cutter, any type of cookie cutter can be used. Cheese men are best made and eaten on the same day. For a treat, use choc chips for 'buttons' and eyes.
