Cheese Cream Betweens

  • 1 1/2 cups plain flour
  • 2 teaspoons curry powder
  • salt and ground black pepper, to taste
  • paprika, to taste
  • 125g Australian butter
  • 3/4 cup grated Australian cheddar cheese
  • 1 egg yolk
  • 2 tablespoons water
  • 125g Australian cream cheese
  • 1/4 cup grated Australian cheddar cheese
  • 1/2 teaspoon ground cummin
  • ground black pepper, to taste

  1. For the wafer biscuits, sift flour and seasonings together. Rub in butter until mixture resembles fine breadcrumbs and add the cheese. Add egg yolk and water and mix to form a firm dough. Turn onto a lightly floured board and knead lightly. Roll out to approximately 3mm thick and cut pastry into 5cm circles. Place onto a buttered baking tray. Sprinkle with paprika and bake at 180C for 10-12 minutes or until lightly coloured.
  2. For the cheese cream, beat the cream cheese until smooth. Add the cheese, cummin and pepper and beat until smooth and well combined. When wafers are completely cooled, join two together with cheese cream.
