Cheese and Broccoli Flan

Serves 4-6


  • 125g broccoli, sliced into flowerettes
  • 1 sheet frozen shortcrust pastry, thawed
  • 2 teaspoons plain flour
  • 3 eggs
  • 1/2 cup Australian milk
  • 200g Australian curd-style cottage cheese
  • 3/4 cup Australian matured cheddar cheese
  • 1 spring onion, chopped
  • salt and cracked black pepper, to taste

  1. Blanch broccoli and plunge into ice water. Lightly butter a 23cm fluted flan tin and line with pastry. Cover pastry with greaseproof paper and load with dry beans. Bake at 200C for 15 minutes. Remove beans. Drain broccoli well and toss in flour. Arrange on the base of the flan. Beat eggs, milk, cheeses and spring onions together and season to taste. Pour into the flan and bake at 180C for 25-30 minutes or until set. Allow to cool slightly before slicing.
