Cheese and Apple Quesadillas with Mint Yogurt

  • 1 cup Australian low fat natural yogurt
  • 1 tablespoon fresh mint, finely chopped
  • 1 cup grated Australian reduced fat cheddar cheese
  • 8 tortillas
  • 1 large green apple, grated and drained on absorbent paper
  • 1/4 teaspoon sweet paprika
  • 10g Australian butter, melted
  • fresh mint, chopped, extra

  1. 1. To make Mint Yogurt, combine yogurt and mint in a bowl and refrigerate until required.
  2. 2. Sprinkle 1/2 the grated cheese over four tortillas, top with grated apple, sweet paprika and remaining grated cheese.  Place remaining tortillas on top and lightly brush with melted butter. 
  3. 3. Cook for 1 minute in a hot non stick frypan until lightly browned.  Turn over and cook for a further minute or until golden and crisp.
  4. 4.Cut into wedges and serve warm with Mint Yogurt sprinkled with extra chopped mint, if desired.
