Cheddar Cheese Souffle

Serves 4


  • 60g Australian butter
  • 1/4 cup plain flour
  • 1 cup Australian milk
  • 1 cup grated Australian matured cheddar cheese
  • 1/4 teaspoon dry mustard
  • Pinch cayenne pepper
  • 1 teaspoon salt
  • 3 eggs, separated

  1. Melt butter and blend in flour, cook 1-2 minutes then add milk. Stir constantly over moderate heat until boiling. Beat in cheese and seasonings. Cool slightly, then beat in egg yolks. Beat egg whites until stiff peaks form. Fold into mixture and pour into an 18cm buttered souffle dish. Bake at 160C for 50-60 minutes. Serve immediately with salad and crusty bread.
